You've written an excellent couple of essays! I have just a few editing tips:
Throughout my life, I am expected to familiarize myself with a completely different world which I have never been exposed to.
When I visited my grandparents, I would say, "Chao Ong, Chao Ba." - which means what? You need to explain this.
they have raised me to be an ambitious individual who independently upholds similar strict expectations and discipline.
The beautiful music that was produced from those music sheets as she played marveled me as I imagine of the possibilities of doing the same with those very music sheets. - this is a little awkward and repetitive. Better would be: "The beautiful music she produced was a marvel to me, and I imagined the possibility of creating the same wonderful sounds from those mysterious sheets of music." (You can play with the description a little.)
I had anticipated taking another year of piano lessons.
Upon hearing this decision, I poured my heart out in tears. (This is just a suggestion; you could say this several ways.)

I think you've done a great job with your essay! I worked on cutting it down a bit, and came up with this, which is 996 words, by my count:
My parents and I come from two different worlds. They were born in Vietnam, and I was born in America. Growing up in a different world from that of my parents, I lack the common understanding and appreciation of life that my parents developed from living in Vietnam for part of their childhood. My parents often view my life in America as much simpler, since they have worked hard to give me all the essential needs such as clothes, food, and shelter. Everything has been given to me in America, so I know I should be grateful. Nevertheless, I appreciate my life more through what was reiterated by my parents rather than through firsthand experience of why I should be thankful. As a result, the two worlds collide. Throughout my life, I am expected to familiarize myself with the world of my parents, a culture completely different from mine, one learned from tradition.
Being raised by Vietnamese parents, I am constantly under pressure to be the perfect daughter. My parents hold high expectations and standards. They want me to be the head of the class, so they taught me multiplication at a time when kids my age were just learning how to add and subtract. My parents also want me to have good manners and be obedient. While I am in church, I have to behave, be attentive, and actively participate. Respecting my elders is important. When I visit my grandparents, I say, "Chao Ong, Chao Ba," meaning hello grandpa, hello grandma. My parents also emphasize the importance of having a good education, which means earning A's in school. Any other grade is not praised or rewarded. They also want me to go to a good college, one of the well-known California universities, where I can be close to home, and to have a good career, which means being a doctor or other health professional.
Although my parents put a lot of pressure on me to maintain my etiquette and good academic record, they have raised me to be an ambitious individual who independently upholds similar strict expectations and discipline. I look forward to the enrichment I receive almost every summer. When I was seven or eight, my mother took me to swimming lessons, which built my confidence and made me an enthusiastic of swimming in deep water. In elementary school, I went to summer school, and in middle school, I begged my mother so that I could take Speed Spanish and Pre Algebra, noncredit courses, for academic enrichment. In the summer following the ninth grade, I wanted my mother to enroll me in chemistry at a private school, liking the idea that I would able to challenge myself in a rigorous course in a different environment from a public school. Successfully completing the course, I was able to take AP Biology in my sophomore year and challenge myself with junior and senior peers.
With my parents' support for my academic success, I was able to continue towards my future career as a pharmacist. My mother took me to Orange County Asian and Pacific Islander Community Alliance's Soar After-School Program, a free program with computers with Internet access, tutoring and mentoring, and academic success workshops. There, I was able to take advantage of many great opportunities such as the goal-setting and college application essay workshop, college counseling, and academic guidance and assistance. During the summers following my sophomore and junior years and weekends during the fall of junior year, I took some classes at a community college including English Composition, English Literature, and Public Speaking all in order to prepare myself for my intended major in pharmacy.
Through my parents' transportation, hard work, and discipline, I have made it this far. Regardless of our different perspectives, the conflict established by our two separate worlds has developed my ambitions for my summer and academic enrichments as well as my preparation for a career.
Throughout my life's journey, I have enriched my musical abilities. I sing along with the songs in church. Throughout elementary education, I had music lessons every week, and I joined choir at school. I played the violin when it was offered in the fourth grade, and I continued violin through the sixth grade. When I moved to a different school district, I discovered an interest in the piano and realized that I wanted to commit to that particular musical instrument for the rest of my life.
This spark of interest for the piano started when my mother took me with her to Allstate Insurance the summer following seventh grade. Near the insurance building was a sign that read "Little Chopin Piano." I was eager to check out the piano studio and asked my mother if we could go. After she completed her business at the Allstate, we went to the piano studio. In one room, I saw a girl take out her music sheets and breeze through the notes with the tips of her fingers on the piano keyboard. The beautiful music that she produced amazed me as I imagined the possibilities of creating the same wonderful sounds from those very music sheets.
Starting September 1st that year, I took private piano lessons every Tuesday. Thirteen to fourteen months after my first piano lesson, I participated in some piano workshops, played in two piano recitals, and played the first year in the national piano-playing auditions. I anticipated another year of piano lessons; however, when I was a freshman in high school, my mother feared my piano lessons would negatively affect my school performance, so she decided to discontinue the lessons. I cried and cried, because music was not just a hobby for me; it was my passion and what brought me joy. Now, even though I no longer have piano lessons, I continue to appreciate life for the moments of musical enrichment and in my spare time, I continue to practice and play the piano, as music is a part of who I am.

Every week, I was given homework out of the theory and note speller book and flashcards to study. Every two weeks, I was expected to memorize the two songs and play them to the teacher. I did not know what a metronome (device that mark time) was until I used one on the third week of piano lesson. Then, I was taught to play the C Major Scale with both hands at great speed. I remember thinking to myself that that was not possible. As a serious pianist, I did my homework, studied the flashcards, and practiced the songs and scale. As a result, I was able to read the notes on the music sheets and successfully played the songs and scale.
Thirteen months after my first piano lesson, I participated in some piano workshops, played in two piano recitals, and played the first year in the national piano-playing auditions. Through playing in front of an audience, I was able to build my confidence. I anticipated another year of piano lessons; however, when I was a freshman in high school, my mother feared my piano lessons would negatively affect my school performance, so she decided to discontinue my piano lessons.
